I drink hot tea everyday at work and occasionally I’ll leave a cup in my desk over night and when I come in the next morning it is almost as dark as coffee even though there was no tea bag left in the cup. My curious mind would like to know, why?

the longer the leaves sit in water the more tannins, polyphenols, etc., leach out of the leaves into the brew
